- 1/4 cup red wine vinegar

1 red onion, minced

About 1 pound green beans, trimmed and cut into 1 inch pieces

1 cup Israeli couscous, cooked according to directions

1 bunch flat leaf parsley, chopped

2 Tablespoons olive oil

salt and pepper, to taste

- Bring a large pot of water to a boil
- Meanwhile, bring red wine vinegar, sugar and salt to a boil in a small saucepan.
- Use a heat resistant bowl and pour mixture over minced red onion, cover with plastic wrap and let sit for 30 minutes
- Once water is boiling, cook green beans until tender, 3-4 minutes. Drain and let cool
- In a large bowl, combine green beans, onion mixture, cooked couscous, and parsley
- Toss with olive oil, salt and pepper
