• 1/4 cup red wine vinegar
  • 1 Tablespoon granulated sugar
  • 1/2 Tablespoon salt
  • 1 red onion, minced
  • About 1 pound green beans, trimmed and cut into 1 inch pieces
  • 1 cup Israeli couscous, cooked according to directions
  • 1 bunch flat leaf parsley, chopped
  • 2 Tablespoons olive oil
  • salt and pepper, to taste
  1. Bring a large pot of water to a boil
  2. Meanwhile, bring red wine vinegar, sugar and salt to a boil in a small saucepan.
  3. Use a heat resistant bowl and pour mixture over minced red onion, cover with plastic wrap and let sit for 30 minutes
  4. Once water is boiling, cook green beans until tender, 3-4 minutes. Drain and let cool
  5. In a large bowl, combine green beans, onion mixture, cooked couscous, and parsley
  6. Toss with olive oil, salt and pepper
