- 1 medium sized potato per person, quartered
- 1 onion, sliced
- 2 cloves garlic, whole
- A couple sprigs of thyme
- Vegetable oil
- Preheat oven to 425 F
- Place potatoes in a single layer on baking sheet
- Cover with onion slices, garlic cloves and sprigs of thyme
- Drizzle with vegetable oil and place in oven for 40-45 minutes, until crispy on outside
- Serve immediately
