• 1 medium sized potato per person, quartered
  • 1 onion, sliced
  • 2 cloves garlic, whole
  • A couple sprigs of thyme
  • Vegetable oil
  1. Preheat oven to 425 F
  2. Place potatoes in a single layer on baking sheet
  3. Cover with onion slices, garlic cloves and sprigs of thyme
  4. Drizzle with vegetable oil and place in oven for 40-45 minutes, until crispy on outside
  5. Serve immediately
