- 3 beets
- 4 quarts water

Instructions:
- Place beets in pot with enough water to submerge beets (about 4 quarts)
- Bring water and beets to a boil
- Lower heat, and simmer for 45 minutes to 1 hour, until easily pierced with a knife
- Once completely cooked, remove from pot and set aside to cool
- Once cooled, peel beets with paper towel as beets will stain hands
Note:
- Beet water may be reserved for making homemade vegetable stock
- To avoid beets bleeding during boiling process, add 2 Tablespoons lemon juice
