• 1 orange, peel removed and sliced into rounds
  • ¼ cup beets, boiled or roasted, peeled, and diced
  • ⅛ cup red onion, thinly sliced
  • 4 cups braising mix
  • 2 ounces blue cheese, crumbled
  • Clove & Cumin Vinaigrette (see recipe for instructions)
Equipment:
Large pot (if boiling beets)
Small bowl & whisk (for vinaigrette)
Large bowl

Instructions:

  1. Toss together orange, beets, red onion in large bowl with braising mix
  2. Sprinkle blue cheese on top
  3. Dress with vinaigrette
  4. Serve immediately
