- 2 cups parsley
- ½ cup Parmesan cheese
- ¼ cup almonds
- ⅔ cup extra virgin olive oil
- salt and pepper to taste
Instructions:
- Place parsley, cheese, and almonds into food processor and pulse a few times.
- Add oil slowly and continue to pulse until pesto is smooth.
- Add salt and pepper to taste.
Suggested Use:
- Serve with any type of pasta topped with shredded Parmesan
- Serve on top of toasted and lightly buttered Italian bread
- Use as a base for a pizza in lieu of a tomato sauce
- Add white beans and serve with crudities
- Serve with steak or shrimp
Variations:
- Replace almonds with pine nuts and add garlic
- Replace almonds with pine nuts, add garlic and use Asiago cheese instead of Parmesan
