• 2 cups parsley
  • ½ cup Parmesan cheese
  • ¼ cup almonds
  • ⅔ cup extra virgin olive oil
  • salt and pepper to taste
Instructions:

  1. Place parsley, cheese, and almonds into food processor and pulse a few times.
  2. Add oil slowly and continue to pulse until pesto is smooth.
  3. Add salt and pepper to taste.

Suggested Use:

  • Serve with any type of pasta topped with shredded Parmesan
  • Serve on top of toasted and lightly buttered Italian bread
  • Use as a base for a pizza in lieu of a tomato sauce
  • Add white beans and serve with crudities
  • Serve with steak or shrimp

Variations:

  • Replace almonds with pine nuts and add garlic
  • Replace almonds with pine nuts, add garlic and use Asiago cheese instead of Parmesan
