• 1 medium egglplant
  • 2-3 cloves of garlic, crushed
  • juice of one lemon
  • 1 small container of lowfat greek yogurt
  • 1 tablespoon olive oil
  • 4 tablespoons tahini
  • 1 tablespoon honey
Baba Ganoush! This is so delicious, and it is a great substitute for mayo on sandwiches.

Directions:

I would add: cumin/parsley as well. Stab your eggplant a few times with a fork. Bake at 400 degrees for 40-45 minutes. Let cool. Peel, cut in half, and remove as many seeds as you can. Pop everything into a food processor, salt and pepper as needed. Enjoy!
