- 1 flatbread
- ½ cup tomato sauce
- 1 small handful fresh arugula (about ½ cup), washed and dried
- ¼ cup Mozzarella cheese (about 2 oz.), sliced
- ¼ cup goat cheese (about 2 oz.), crumbled
- ¼ cup red onion, thinly sliced
- 4-6 basil leaves, sliced chiffonade (stack basil leaves, roll into a cigar style shape, and very thinly slice from the top of the leaves to the bottom)

Directions:
- Preheat oven to 425 degrees F
- Make or buy flat bread (see flat bread recipe for instructions)
- Assemble flat-bread by ladling tomato sauce into center of flat-bread, and using bottom of ladle to spread sauce over surface of flat-bread
- Top with arugula, cheeses, red onion and basil
- Bake for 7-10 minutes, or until cheese is melted
Variations:
For a Caprese style pizza:
- Drizzle the flat bread with extra virgin olive oil instead of tomato sauce
- Top the flat bread with Mozzarella cheese, fresh sliced tomato, and basil
- Add fresh cracked black pepper
- Bake as directed
For an interesting twist on a pizza:
- Drizzle the flat bread with extra virgin olive oil
- Top the flat bread with arugula, red onion and goat cheese
- Add fresh cracked black pepper
- Bake as directed
