• Roasted Kale Chips
  • 1 large bunch of kale
  • Dressing:
  • 4 T Olive Oil
  • 2 t Mustard Oil
  • 1 T Maple Syrup
  • 1 Lemon (Juiced)
  • 1 T Balsamic Vinaigrette
***This recipe best used week 2, when kale is in full swing***

Pre-heat oven to 350. Line a baking sheet with a Sil-Pat or other non stick liner. Wash kale and remove ribs. Tear or chop kale into medium size pieces. Place in a bowl large enough to toss with dressing. Whisk all ingredients for dressing in a separate bowl. Whisk until well blended. Pour dressing over kale and toss. When kale is well coated spread out a single layer on the baking sheet and bake until crispy, approx 8-12 minutes. Let cook in single layer and serve in a bowl or as a garnish to your favorite pasta.
