Carrots are a sweet root vegetable very closely related to parsnips. Of course, carrots are known for their trademark of being  “good for your eyes”. This is due to vitamin A (specifically beta-carotene).

In addition to vision, vitamin A contributes to heart disease prevention and can be beneficial for heavy smokers. Studies have indicated that vitamin A plays a role in lung health (further research indicated that cigarettes contain a carcinogen that induces vitamin A deficiency).

If you’re tired of eating carrots raw with dip, try making carrots a warm side dish. Roast the carrots in the oven with spices such as allspice, cinnamon, cloves, garlic or parsley drizzled with olive oil or a little butter until soft and tender to the bite!
