Whether it’s a bell, banana, or a cubanelle, sweet peppers are a wise addition to the summer menu. They have a nice crisp, crunchy texture and are full of sweetness. Packed full of antioxidants, sweet peppers are an excellent source of vitamin A, and vitamin C. Red bell peppers, which are more mature and therefore sweeter than their green counterpart, have three times the amount of vitamin C than citrus fruits!
Sweet peppers are enjoyable simply cut julienne and dipped into any hummus. (You can even make your own pepper hummus!). Sweet peppers can be nicely grilled and stuffed with meat, or rice with spices. On a hot summer day, you can use peppers to make a chilled soup, or add them to a fresh tabbouleh. No matter the dish, sweet peppers will add beautiful color to brighten the meal.
