Brian believes that food should be simple, pure, balanced and attainable. These values have influenced his career in cooking. Starting at the bottom and working his way up, his drive for all things food and cooking has taken him around the world. Brian has spent years training under some of the best chefs in Europe and The United States and competing in American Culinary Federation competitions taught him grace under fire.

After more than a decade in the restaurant business he has decided to refocus his passion for food. The Bistro Farm is the latest work from Chef Brian and his passion for food and people are evident in every step.

While teaching cooking classes at Kitchen Window, Brian started a relationship with small organic farmers in Minnesota and Wisconsin. What started as weekends in the fields turned into weeks on the farm, rumor has it that he purchased his first plow before he had his own farm.

From farm to food no one has more passion, and it comes out when you talk to him about his new mission in life.
