Bethany earned her degree in Food Science & Human Nutrition with a concentration in Dietetics from the University of Illinois in Urbana-Champaign.
Aspiring to become a Registered Dietitian who provides nutrient packed food to families all over the world, she attests that working with the Bistro Farm has been a way to connect with people who share similar passions.
When she is not writing about veggies, she is usually cooking them and exploring alternative health practices. A raw foodist at heart, Bethany is a firm believer that our health (physically, mentally, and spiritually) is a direct result of the quality of food with which we provide our bodies. She strives to live by one motto: eat as close to the ground as possible.
