- 1 red potato per person, scrubbed
- Olive oil to drizzle
- Salt and pepper
- 2-3 scallions, chopped
- Preheat grill or oven to 450 degrees F.
- Place potatoes in large pot of cold water and bring to a boil. Cook potatoes until tender when pierced with a fork
- Lay cooked potatoes in single layer on to an oiled baking sheet, and smash down with the back of a large spoon, or with hand if potatoes are cooled
- Drizzle each potato with olive oil, and season with salt, pepper and scallions
- Place baking sheet onto grill and close lid or place in oven, for about 20-25 minutes, until potatoes are crispy
- Serve hot and crispy
