• 1 red potato per person, scrubbed
  • Olive oil to drizzle
  • Salt and pepper
  • 2-3 scallions, chopped
  1. Preheat grill or oven to 450 degrees F.
  2. Place potatoes in large pot of cold water and bring to a boil. Cook potatoes until tender when pierced with a fork
  3. Lay cooked potatoes in single layer on to an oiled baking sheet, and smash down with the back of a large spoon, or with hand if potatoes are cooled
  4. Drizzle each potato with olive oil, and season with salt, pepper and scallions
  5. Place baking sheet onto grill and close lid or place in oven, for about 20-25 minutes, until potatoes are crispy
  6. Serve hot and crispy
