Garlic scapes have a hefty amount of calcium, vitamin C, and protein. Similar to garlic cloves, scapes help clean the arteries therefore contributing to prevention of heart disease and high cholesterol. Vitamin C has numerous health benefits including facilitating iron absorption in the small intestine, and is involved in the regeneration of vitamin E (which also serves as an antioxidant). Scapes make a great addition to salsas, pestos, or salad dressings. Or, add some green to your garlic bread by topping it with chopped garlic scapes.
