• 1 flatbread
  • ½ cup tomato sauce
  • 1 small handful fresh arugula (about ½ cup), washed and dried
  • ¼ cup Mozzarella cheese (about 2 oz.), sliced
  • ¼ cup goat cheese (about 2 oz.), crumbled
  • ¼ cup red onion, thinly sliced
  • 4-6 basil leaves, sliced chiffonade (stack basil leaves, roll into a cigar style shape, and very thinly slice from the top of the leaves to the bottom)
Equipment:
1 ladle

Directions:

  1. Preheat oven to 425 degrees F
  2. Make or buy flat bread (see flat bread recipe for instructions)
  3. Assemble flat-bread by ladling tomato sauce into center of flat-bread, and using bottom of ladle to spread sauce over surface of flat-bread
  4. Top with arugula, cheeses, red onion and basil
  5. Bake for 7-10 minutes, or until cheese is melted

Variations:
For a Caprese style pizza:

  1. Drizzle the flat bread with extra virgin olive oil instead of tomato sauce
  2. Top the flat bread with Mozzarella cheese, fresh sliced tomato, and basil
  3. Add fresh cracked black pepper
  4. Bake as directed

For an interesting twist on a pizza:

  1. Drizzle the flat bread with extra virgin olive oil
  2. Top the flat bread with arugula, red onion and goat cheese
  3. Add fresh cracked black pepper
  4. Bake as directed
