• 3 beets
  • 4 quarts water
Equipment:
Large pot

Instructions:

  1. Place beets in pot with enough water to submerge beets (about 4 quarts)
  2. Bring water and beets to a boil
  3. Lower heat, and simmer for 45 minutes to 1 hour, until easily pierced with a knife
  4. Once completely cooked, remove from pot and set aside to cool
  5. Once cooled, peel beets with paper towel as beets will stain hands

Note:

  • Beet water may be reserved for making homemade vegetable stock
  • To avoid beets bleeding during boiling process, add 2 Tablespoons lemon juice
