The radish is a crunchy and flavorful addition to the early summer months. Full of calcium, potassium, and fiber, radishes are fast growing and best stored with the tops removed. This will prevent nutrient and moisture loss (but you can save the tops for later use).

Try a radish confit with some citrus fruits such as orange or lemon, some sugar, and butter. Bring these to a boil and simmer until reduced to a syrup. (Recipe coming soon!)
